Billy’s is a restaurant within a heritage listed and restored 1890s homestead, one of nine venues and conceptual crown jewel of hospitality precinct Ayrburn, Queenstown. 

The venue’s vision included honouring the site’s agricultural history, the 19th century homestead’s original residents and supporting Ayrburn’s overarching strategy as a must visit and world-class food and wine destination.

The venue consists of five intimate dining rooms centring around the main bar, a reconstructed wing with dispense bar, large waiters station and kitchen pass and The Conservatory, a new ornate external structure inspired by traditional orangeries.

Each room’s unique visual narrative achieves eclectic storytelling with consideration given to how colours and textures would coalesce and contrast through portals when moving through the space. Decadent hues and textural materiality saturate each space; colour drenched rooms layered with patterned wallpaper, velvet banquettes, custom furniture, found and bespoke lighting, glazed and hand painted tiles, antiqued mirrors with custom printed patterns, studded leather bar front, a kaleidoscope of stone varieties with custom profiles and bespoke, patterned rugs.
